Fava Bean Dip

Prep time: 5 mins Cook time: 50mins 


500g yellow split peas

3 red onions chopped (keep a tablespoon of finely diced red onion for garnish)

1 litre water

2 lemons juiced

2 cloves garlic chopped

a sprig of thyme

100ml extra virgin olive oil

juice of 1 lemon

salt & pepper

To serve, chopped red onion, lemon juice and olive oil

METHOD:


Rinse the peas with water

Sautee the onion, thyme and garlic until caramalised in a heavy based saucepan that has a lid.

Add the peas with the water and oil. 

season with salt and pepper, then cover with a lid and simmer for 50 mins until the peas are soft and mushy

IF ANY FOAM APPEARS ON THE SURFACE, SKIM WITH A SLOTTED SPOON.

When done, add the lemon juice and transfer to a blender and combine until smooth and like a puree

Serve with a drizzle of olive oil and the diced red onion.
